adfamiliares was asleep, and I thought the noise might wake her, so I practiced my Top Chef quickfire skills and used a wire whisk. It's a faith-based process, waiting for this sloppy liquid to transform into something with peaks and scallops that seizes the whisk, but when it happens it's like a sudden small magic.
(Gus-Gus approves, too. Particularly when I let her lick the bowl.)
